NYC Day 2 - Misunderstanding fundamental truth (some people call it cheating)

First let me say - Thanks for reading my first day in NYC blog story yesterday. If you haven’t read it yet, then please read it first before proceeding with this one….

I told everybody I met yesterday about my blog, inclusive my friend Vas. I was really proud…
Vas said that he really liked it… …. But something was wrong t
hough, he said….
What do you mean? Wrong what, I asked??
… It’s something about the fundamental truth…. I think… you must have misunderstood something, he answered…

The Manhattan skyline you wrote about…. it wasn’t what you thought it was….

Nonsense
It was a bit overwhelming for me to hear that kind of nonsense from one I thought was my good friend…
I remembered one of those funny pictures… this kind which daily succeed to break through the company firewalls and spread around to all the mail inboxes - in spite of very strong security politics implemented by network department. I learned that this kind of pictures is always being sent by some of the guys from a company’s network administration team… at lest in the company I work with…

Truth
The picture I remembered was about Chinese restaurant… It depicted a table with some used service, two sticky used chop sticks and two hands unwrapping one of those small chinese fortune cookies. This little piece of paper claimed: “…It wasn’t chicken…”

This guy with the chop sticks, he apparently loved Chinese cuisine…
Nevertheless, was he misunderstanding some fundamental truth…

Vas contnued, - It wasn’t Manhattan on your picture. You were so excited about your story that you forgot something… The appartment’s windows are heading north, Manhattan is south from Secaucus… The skyscrapers you saw were New Jersey City

Greenwich Village, NYC. It’s a club claiming to be the oldest NYC rock scene with a spectacular list of performers from Stevie Wonder, Johnny Mitchell, and Tracy Chapman to Woody Allen and Mohammad Ali…

Especially the last two must have had fun together…

NYC Day 1 - What’s YOUR picture of New York?

The Dreams
“So… It’s your first time… What’s your picture of New York?” - was one of the first questions I’ve been asked after I landed on the back seat of my friend Vassily’s brand new Mercedes, flanked by my two guitar gigbags on a way from Newark airport. Well… a good question, I grinned. Actually, I was dreaming to visit The Big Apple right from the time when I first discovered jazz music in my teenager years in Moscow. Listening to Ella and Joe Pass, imagining some bright restaurant hall with stylish waiters somewhere in Broadway, or some energetic bop session playing Charlie Parker’s fluent Scrapple From The Apple theme at some cool and hazy jazz den. The word New York was not a name for a city, rather for a concept of freedom and strength, a city of broad avenues, neon lights, big money, skyscrapers and vintage cars. The dream city of contrasts, populated by businessmen on the one side and jazzers on the other. Too faraway from the soviet style, those surroundings was just hard to actualize. This picture was potent enough to survive until today, when its imaginary state was going to be heavily confronted, according to my plans…

The Picture
To make a strong statement that my vacation to The Big Apple was about to begin, I gave my colleagues a couple of apple pies on thursday afternoon. Do you know that glorious “Haha… I’m not with you anymore” feeling, you get on your job the last day before going on vacation… ?! The apple pie perfectly rounds up the scenery, forcing the colleagues’ acceptance of the fact that you leave early that day…
I promised a couple of guys to update my blog every day during my trip. Enjoying the evidence of my own smartness, I realized, that giving this promise to someone else - other than myself, would make it easier to hold.
A good blog has to be supported with good pictures. I was eager to start using my brand new Canon IXUS75 instead of the litlle 2 megapix of my handheld PDA, which is handy enough to have as a phone, but just not OK for the fancy blog like mine.
According to my brains, the minimum requirements for the good First Picture of NYC has to include skyscrapers, neon lights, a broad avenue with the ocean of cars and the crowd. It should document dreams coming through - as they are, and as they have always been. It should document dreams in their untouched virginity…

The reality
Well… What can I say… Hours has passed. We managed to buy some nice food at grocery store, nurturing my hope to survive at least physically during this 2 weeks in NYC. We made an improvised dinner for three at the flat in Secaucus, a very nice and quiet place laying beautifully across a salt marsh area only 7 miles from Manhattan. A nice big flat my friend’s beautiful wife Ksu gave to my full disposal during my stay. The night’s program featured a “NYC by night drive”, with Vas guiding and showing the way at a passenger seat, and Ksu continually helping with the advices on how to avoid the untamed yellow cabs. Afterwards we were invited to a genuine loft party just in front of The Knitting Factory Club building . The loft was populated with “friendly painters” (as a complete opposite to “enemy combattants”) - perfect audience for my first NYC performing experience…
The night drive through NYC from Tribeca (syllabic abbreviation of a part of Manhattan meaning “Triangle Below Canal Street”) to Secaucus on the other side of Hudson River, perfectly rounded up my first day in NYC. For the first time in my life I was driving a brand NEW Mercedes given to my full disposal by my friend Vas during my stay! Needless to say I was stunned by all this… I landed in Secaucus after a 1,5 hour drive instead of 20 minutes, as it was specified in the hand written plan beautifully painted by an artistic friend of mine…
What can I say…?? Beautiful friends, beautiful city, beautiful car, beautiful day!! “Who could ask for anything more?”, as George and Ira Gershwin put it rhetorically in one of the beautiful examples of their musical brotherhood…

More Picture
Well… back to the pictures and the struggle and the reality… During the whole day I was repeatedly trying to remind myself of that brand new piece of japanese high tech in my pocket, waiting for “the real NYC” shot.
It’s pretty hot here in the end of October, so my jacket with the camera was at the backseat of the car. And in the end of the day I was struggling with traffic lights, myriads of unexpected traffic signs, my jet lag, police cars continuously popping up out of nowhere - and cops figuring out what my “strictly 25mph” driving attitude was about…

Wrap up… Picture 1 was taken at 3AM at night, Picture 2 at 7AM and Picture 3 at 9AM this morning.
It features Manhattan skyline as I see it…

More reality
This colourful attempt to defy the writing block is about being finished. I have to get something to eat and move my ass towards the new explorations. I hear phone ringing. That early… ??
It could only mean that Vas has no hangover this time, I said to my self, feeling growing respect for my old comrade.
What I hear is a voice machine, stating with mechanically indifferent voice: “The purpose of this call is to explore ffinancial possibilities of….”. Fuck OFFF, it’s my morning!!!!!
10 minutes after a new call… now a very polite and smiling man voice “Calling from the NYC newspaper distribution company. MAAAM, would you be interested in ….

Musikalsk foredrag - om at tage et år ud af kalenderen og holde fri…

Her i dag holdt et foredrag for et netværksgruppe i Business Danmark. Det lidet uortodokse foredrag varede halvanden time og hed “Hvad giver det at holde et år fri og hellige sig selv”. Jeg ville ellers kalde det “Have break, don’t have a KitKat”.
Den handlede som altid, om store emner ;) Ens forventninger til livet, om stress, om at træffe valg, om at turde, om at udnytte muligheder, om tilfredstillelse (i alle former), om det latterlige (inkl. latterkurser), om fremtidsdrømme, overspringshandlinger, om forskelle mellem carpe diem og memento mori, om at være længe undervejs (bl.a. whisky), om livrem of seler, om aflastning (bl.a. de røde Ferrarier og katolske præster), om ledelse (bl.a. psykopater), om hustruvold, om livsnydelse, om tid til refleksion, om at holde igen på agressioner, om de store værdier (bl.a. børne-aftenbank), om at holde fremgangen nede, om at være ærlige mod sig selv, om at tage tid til at svare på de vigtige spørgsmål og om at nyde dagen i dag.

Jeg sang flere af mine dejlige sange som kommentarer til forskellige emner. Det var en meget levende foredrag, en ny form for optræden som jeg godt kunne tænke mig af dyrke mere i fremtiden. Hvad med foredrag om kærlighed i dens forskellige former… med musikalske kommentarer…

Til sidst læste jeg en digt som jeg fandt på nettet. Skrevet af en 85-årig kvinde ved navn Nadine Starr. Digtet blev efter sigende fundet i en skuffe af en sygeplejerske efter Starrs død.

Hvis jeg skulle leve mit liv om…

Jeg ville turde gøre flere fejltagelser.
Jeg ville slappe af. Være mere smidig.
Jeg ville være mere enfoldig.
Jeg ville tage færre ting alvorligt.

Good concert at Drop Inn yesterday!

It was nice playing at Drop Inn in Copenhagen last night!

My respeeect to people who came in to see our funky late sunday night show!!
Place is well known fot its nice athmosphere, good music and vast selection of whiskies! It was a big night for me for two reasons.

I tried my new instrument setup for the first time. My new full scale Washburn Montgomery J6 jazz guitar with humbucker pickups custom wound by Fedor Chernyshev, pickup expert of Shamray Guitars in Moscow. Custom electronics made by Henrik Thomsen at BassLab in Copenhagen. Those pickups are special because they split my guitar signal in two. The pair of lower guitar strings go into their own output, which is plugged into the GallienKrueger bass combo. Other 4 string are split and go directly to the Fender Jazzman guitar combo. So… I’m actually a bass-guitar duo. Which could in the long run possibly mean expensive shrinks…
Last night it went OK… but it was actually three of us… I warned you…

We.. I mean.. I played with Jonathan Aisen, fantastic drummer, better known from bands like Klezmofobia (DK) and Tummel (SE). We rehearsed only a couple of times before the show, but according to our audience it looked and sounded like we were enjoying playing together, it was sheer fun - Jonathan is very energetic and dynamic musician! I’m looking forward to play with him.

Tiberedning af grundbouillon

Okse kød skåret i mellemstore terninger koges 0,5 time (evt. med et par gode kødben), lammekød i terninger tilsættes og fortsætter med at koge 1 time. Det skal koge på lille blus, husk at tage skummet af jævnligt. Tør evt. grydens sider af med køkkenrulle. Der skal ca. 1,5 kilo godt kød til 4 liter vand. Du må gerne lægge et enkelt laurblad og 2 hele store løg.

Ikke kødet alene

Efter 1,5 time tilsæt følgende:
- en håndfuld stenfri svesker
- Chili - Pasilla, Guahillo eller andet ikke for stærk chili med god smag. Uden frø, hakket ca. 1 teske - PAS PÅ!!!
- Koriander frø stødt i morter, ca. 1 teske
- Aromatisk sort peber stødt i morter, ca. 1 teske
- et halvt glas ris

Sluk komfuret 5 minutter efter risen er lagt i.

Make it more spicy

Når komfuret er slukket tilsæt følgende:
- 3 hele hvidløg… Ja, jeg jeg mener ikke 3 fed hvidløg. Behøver jeg at sige at de skal være hakket - ikke presset.
- 1 glas hakket frisk koriander
- 1 glas hakket frisk persille
- 1 glas frisk basilikum

For sur, for sød, eller…

Salt varsomt. Hvis der mangler syrlighed prøv at tilsætte en teske granatæblekoncentrat eller evt. citronsaft.
Pas på med ikke at gøre det FOR surt.
Evt. juster med lidt sukker - og eller salt.
Før serveringen tag løgene ud - de har aftjent sin pligt.

Dragesuppe?

Hvorfor? Fordi da mine børn var helt små, kunne det være en opgave i sig selv at få dem til at spise suppe… på trods af de var et par små halvrussere med suppegenerne i orden. Aber wir haben andere metoden, tænkte jeg… Og så sagde jeg, at den der spiser en tallerkenfuld suppe, får ild ud af munden… ligesom en drage…
Og hvem kan udstå fristelsen at spyde ild, spørger jeg bare?

Og så det var jo ikke en gang snyd…

Nå… du mener, hvorfor georgisk? Jamen… det er fordi Georgien er en af de tidligere Sovjet lande som har den mest spændende køkkentradition. Og når man i forvejen er en tidligere dontwannabe-KGB-agent … så bliver den georgiske suppeopskrift udvalgt som basis for dragesuppen…

UPDATE!! How much does a home concert cost?

Here’s a little but important update concerning home concerts.

Of course it is all up to you as a Host/hostess if you are willing to invite your friends to a private party and pay for all costs yourself.

BUT - you can also ask your guests to pay a minimum amount of money (50-100 DKK each) to cover the expenses for the musicians and to keep the music alive (this arrangement is only possible for solo concert).

Performance time can vary from 30 min up to 2 sets, 45 min each. I can play solo or duo with Klaus Menzer on percussion (known from Sneakers, Savage Rose, Sanne Salomonsen, Anisette, Burning Red Ivanhoe).

A home concert reveals an obvious presence of intimacy and fellowship. This atmosphere makes the borderline between artists and guests invisible. A Home Concert is definitely worth recommending!

Kaljá - Ivan den Grusommes favorit

Lidt baggrund

Kaljá – er en gammel traditionel russisk fiskeret, som stammer fra XVI – XVII århundrede, den er desværre nu næsten glemt i Rusland.

Kaljá forberedes fra starten som ukhá, en mere almindelig fiskesuppe, kendt og elsket af alle russere. Men der er grundliggende forskelle - kaljá indeholder saltagurker med saltlage og citroner og rod lakserogn og endda af og til rigtig sort stør-kaviar !! . Det sidste anbefales dog udelukkende hvis man har en god og large sponsor, for det kan blive dyrt at lege tzar. Desuden kræver kaljá flere krydderier end ukhá og har en tykkere konsistens, så buljonen har er mere krydret smag. I gamle dage var kaljá blandt retter, som man lavede ved festlige lejligheder.

Også i dag, vil denne suppe, veltilberedt, altid brillere på ethvert festbord. Dette gælder også Danmark med flertal af suppetraditionens hedninge. Landet er dog infiltreret af en lille armé feinschmekkere, som er i gang med det slidsomme arbejde at omvende nationen…

God kalja kan baseres på både havfisk og ferskvandsfisk eller en blanding af disse. Det bedste er at kombinere fede fiskearter med de ikke-fede. F.eks i den nordlige Rusland (Arkhangelsk) lavede man traditionelt kalja på hellefisk (páltus) og torsk (treská). Fede fisk passer rigtig godt til kaljá’s saltede smag.

Om fisken

Først lidt om valg af fisk til kaljá. Grundbuljonen, en klassisk russisk ukhá, laves på fisk, som giver en klar, sød og lettere klæbrig-fed konsistens. Suder (sudák) og aborre (ókun’) – de giver en hvid ukhá. Ukhá med karpe (karp), karuds (karás’) og lignende hedder sort ukhá. Den røde eller rav ukhá får man af fede fiskearter – torsk, stør (asjótr), laks (lasós’), forel (farél’) og her tilsætter man også safran. Udover disse finder man flere andre typer typer ukhá, afhængig af forarbejde og varmebehandling af fisk og ingredienser. Bl.a. tilsat tørret eller kold/varm røget fisk, krebs, forskellige tørrede/friske svampe o.s.v.

Nogle russere kan finde på at sige, at man kun laver ukhá af ferskvandsfisk. Det er dog en misforståelse. Flere havfiskearter vil give en fremragende resultat – bl.a. torsk, hellefisk, havlaks, rødfisk (marskój ókun’) og andre.

Hvis det skal være helt ret, så tilhører hverken ukha eller kalja til kategorien ”rigtige” fiskesupper. Det er fordi de er baseret på klar fiskebuljon (ordet ’suppeterninger’ eksisterer slet ikke !). Rigtige russiske deciderede fiskesupper kan jævnes med mel, hvedekorn, der kan bruges svitsede løg og grøntsager. Det fine ukhá og kaljá tåler ikke dette. For at bevare og fremhæve den friske fiskesmag bruger man her (udover fisk og kryddeurter) kun kartofler og gulerødder.


Ligesom med sushi og i øvrigt alle andre fiskeretter, er fiskens friskhed det absolut vigtigste – udover det, at man er sulten, når man går igang. Hvis ikke man selv fisker eller bor bor tæt på en havn, skal man kunne stole på sin fiskehandler – og have en god lugtesans.

Hvis fisken er frossen skal man huske at putte den i suppen uden at defroste den først.

Man skal bruge både billige småfisk (til grundbuljonen) og gode fiskefileter – husk at bede fiskehandleren om fiskehoveder og ben evt. fra flere forskellige fiskearter.

Ingredienser
1-1,5 kg fisk – småfisk og gode fiskefileer f.eks. laks, torsk, hellefisk, rødfisk. Fantastisk hvis man kan skaffe suder eller aborre.

1,5 – 1,75 l vand (helst for lidt end for meget, evt. justeres senere)

2-5 saltagurker (små eller store) russiske eller israelske (små) - i saltlage uden sukker og eddike. Helst ikke for stærke - uden for meget peber i lagen.

1 glas agurkesaltlage.

3 – 4 kartofler

0,5 citron

2 løg

1 porre

1 persille (rod og grønt)

1-2 gulerødder

ca. 10 korn sort peber - groft knuste

1-2 laurbærblade

1 spiseske dild

1 knivspids safran

1 spiseske frisk eller 1 teske tør estragon

1 spiseske (eller mere) frisk eller 1 teske tør basilikum

Tilberedning

Man skal starte med at småkoge en grundbuljon på småfisk, fiskehoveder og ben (ca. 20 min.) – de smides ud bagefter og buljonen filtreres. Bagefter småkoges grøntsager – løg, persillerod, selleri, persille, laurbær, sorte peberkorn og salt. Efter ca. 20 min. tilsæt snittede gulerøder, kartofler, porrer med frisk estragon og evt. basilikum. Efter 5 min. tilsæt agurkesaltlage (forkogt) og saltagurker snittet som kuber. Derefter tilsæt forsigtigt portionsskårede (f.eks. 3×3x3cm) stykker fiskefilet.

Hvis man er en fiskeri-addict og har nøget saltet lakserogn, så er det nu tidspunktet for at ofre den for at formilde fiskeguderne. På den måde vil man score sikre points aht. både smagen og imponator-effekten.

Hvis man er helt oppe at køre, så er et par spiseskefulde rigtig stør-kaviar også OK (også iransk)… No comments.
Endeligt vil jeg lade de uundgåelige spørgsmål om stenbiderrogn forblive ubesvaret …

Man siger, at jo flere forskellige krydderier, des bedre resultat. Det samme gælder kvantiteten (og kvaliteten) af fisk.

Til sidst hæld en halvglas varmt vand med udblødt safran ind i buljonen.

Tag kasserollen af komfuret og lad Kaljáen hvile ca. 20 min.

Malosol saltagurker og salttomater

Malosol betyder “letsaltede” på russisk. De kan spises allerede om et par dage, ellers afhængigt af temperament, dvs. hvor længe man kan vente. De bliver mere saltede med tiden…

De skal først stå 2 dage ved 10-15 grader, bagefter i køleskab.

Her er ingredienserne:

2 kg små drueagurker – vasket, skåret fra begge sider og evt. halveret

5 bakker små cherrytomater – vasket, stilke skal ikke tages af

Hvidløg – renset, enderne skåret af, evt. halveret

8-10 l kogende vand

400-500 gr. salt

håndfuld kirsebærblade

håndfuld solbærblade

1 spsk. korianderfrø

1 spsk. estragon

1 spsk. sort peber knust

3 stk. små jalapeño peber

3 spsk. dildfrø eller 5-10 dildkroner

100 gr peberrod

3 laurbærblade

2 persillerødder

100 gr. god eddike, f.eks. med dild eller basilikum
